Sophisticated Dining Across a Myriad of Venues:

Exceptional culinary staff offers sophisticated menus comprised of the freshest produce and the highest quality choice cut meats and seafood available. From a quick bite poolside to a formal five-course affair in the elegant Main Dining Room, the crew of Holland America Line knows how to orchestrate a truly memorable dining experience.

We are in the midst of introducing As You Wish™ dining throughout the fleet. With As You Wish dining, meals are based on your preferred schedule. Whether you prefer the classic fixed dining times or more flexible open dining, the choice is yours to make prior to departure for your cruise.

As You Wish dining - the latest addition to Holland America's Signature of Excellence initiative - makes onboard dining more inviting with options to suit every taste. Guests will be able to choose a traditional pre-set seating and dining time or a flexible, open seating schedule in the Main Dining Room.

While already implemented on the ms Noordam, the program will roll out to the remainder of our fleet beginning this fall. At the time of booking choose either flexible/open dining or classic pre-set dining time (early or main). If you choose the flexible/open seating program, you may make reservations daily up to 4 p.m. - or simply walk up during dining hours.

The Pinnacle Grill, a Taste of Perfection:
The Pinnacle Grill* offers a level of elegant sophistication unmatched anywhere on the seven seas. Guests who dine at the intimate, reservations-only Pinnacle Grill will enjoy candlelight and fine décor, creating a romantic ambiance that sets the stage for fresh dishes and select wines. Creative and innovative menus, drawing from regional ingredients of the highest quality, will delight the palate and ignite the senses. Choose your own cut of aged Sterling Silver Beef from the display tray. Guests of the Pinnacle Grill can expect:

Aged Sterling Silver Beef Porterhouse and Bone-in Ribeye steaks, known for its superior marbling, taste, and tenderness
Fresh seafood dishes such as Cedar-planked Halibut with Alaskan King Crab Hollandaise or Dungeness Crab Cakes
An extensive wine list featuring many selections rated "Excellent" by Wine Spectator
Luxurious appointments including Bvlgari® china, Riedel® stemware and Frette® linens
Intimate, reservations-only dining

Courtyard or Poolside, It's all about Choice !

Relaxed dining is available in the Lido Restaurant every night. Casual dining is also available at the Terrace Grill, located outside by the pool. At the Terrace Grill, swimsuits are suitable attire. Kid-friendly menus including special sandwiches, tacos, hamburgers, hot dogs and pizza are offered at both restaurants.
THE LIDO RESTAURANT
The Lido Restaurant - with its pool and terrace on one side and the ocean all around - is the hallmark of every Holland America ship. In fact, our Lido Restaurant was the first of its kind in the cruise industry, and although many have imitated the concept, there is no match for our extensive menu, such as carved meats, fresh seafood, fruits and vegetables, pastas and salads. And as always, impeccable service provided by our attentive, yet unobtrusive staff, is never far away.

Bountiful breakfasts, featuring fresh-squeezed orange juice, cooked-to-order omelets, pancakes, fresh fruits, natural cereals and yogurts
For lunch, cuisine from around the world, including Asian stir-fry, traditional dishes, Sushi, pizza, pasta, gourmet sandwiches and an extensive salad bar
Made-to-order dinner entrés and tableside waiter service for dinner
Dine indoors in the air-conditioned comfort or enjoy the fresh air on deck

THE TERRACE GRILL
If you're cruising the tropics, it's sunny and warm up on deck. Cooler destinations have the added insulation of our sliding glass roof. Regardless, enjoy a relaxed lunch poolside at the Terrace Grill.

DRESS CODE
Evening dress falls into three distinct categories. Each night a daily program will be delivered to your stateroom announcing the suggested dress for the following evening. Comfortable, relaxed clothing is fine for evenings designated as casual; however, T-shirts, jeans, swimsuits, tank tops and shorts are not allowed in the dining room, Lido restaurant, or public areas during the evening hours. During informal nights, dresses or pantsuits for women and jackets (tie optional) for men are standard.

On festive formal evenings, women usually wear cocktail dresses or gowns and men usually wear business suits or tuxedos. There are approximately two formal nights per week. (Gentlemen: Although business suits or tuxedos are suggested attire for formal evenings, they are certainly not required. You are welcome to wear a jacket and tie on formal nights.)
